Imagine a bread slightly darker than pumpernickel... and so dense that it hardly has any airbubbles in it. It has almost no softness to it.

I have had a terrible time finding proper germanic bread in the states... everything is so darn fluffy and soft... and sometimes I have a craving for proper bread where two 1/4-inch thick slices will actually fill you up nicely. It is kind of a stout in bread form.

The proper danish name is rugbrød. It is in the "phylogeny" of schwartzbrot... but I thought the german terminology would make more sense to you merkins.
