Neat I might just try that.
Something I'm cooking up tonight for my mums birthday. Thanx to some fat lipped cockney wannabe for this recipe.
(serves 4)
Salmon fillets
Extra virgin olive oil
Some Courgettes slice em lengthways
Some yello courgettes chopped up roughly
Asparagus
200g of rocket (arugula http://www.ochef.com/151.htm)
salt
2 lemons cut in half
Dressing
handful of thyme leaves picked
salt
4 tablespoons of extra virgin olive oil
Juice of 1 lemon
Season fillets and smatter with some olive oil, season the courgettes and asparagus with some salt.
Switch on the BBQ or get a griddle. Get it nice and hot then sear the salmon and veggies for a few minutes each side. Should get em slightly char-grilled.
Meanwhile... Crush the thyme add a pinch of salt pour in the lemon juice and olive oil stir it up a bit.
Take the veg and fish off the heat, toss veg with rocket. Pour on the dressing and serve with the fish. Pour a little dressing on the salmon to if you want. bung half a lemon on the side and there you go.
Good call on the white wine I'll bag a bottle on the way home.
For afters I'm just doing pancakes with maple syrup and blue berries.

Another nice dressing (sweeter) is
Tablespoon of honey
6 tablespoons of olive oil
3 tablespoons of lemon juice
salt/ground black pepper

Rocket, I think you mean the french word for "Arugula" which is "Roquette".
And it might help to tell others that "Courgette" is simply British Zuccinni.

According to the irritating Delia Smith, the British have prized rocket since at least Elizabethan times. Enough time for us to get our own spelling of it, I guess.

As per the recipe I included this.

I couldnt find it for love nor money the other day, then suddenly all the shops had it. I still couldnt find the yellow courgettes (summer squash) though 
Where the hell did the word 'Zuccinni' come from anyway? I always think of Mario Brothers when I hear it for some reason
