yay me - or somesuch. 
I want to dedicate this post to all the posters on these here web pages. Thank you for innumerable fun and thought-provoking reads. 
I have recently begun experimenting with coconut milk in my cooking, and thought I'd share one of my Serendipitous attempts
Chicken/asparagus curry
Ingredients:
Chicken breast, cut in bitesize pieces
Onion, coarsly diced
Asparagus, cut in 2-inch pieces
garlic and habanero chili, chopped
butter
olive oil
curry powder (used sparingly)
lime juice
oyster sauce
salt and pepper
- take a frying pan, set to medium-high heat
- add a little butter and olive oil (a great combo for taste)
- brown chicken breast once the butter turns clear
- add onion, garlic, habanero and curry. Fry till onion starts to brown slightly. Stirring is good
- add lots of asparagus, fry for a couple of minutes, while stirring.
- add coconut milk, stir gently
- add oyster sauce, lime juice, salt and pepper to taste.
- let simmer for 2-5 minutes, repeat previous step
- Serve with basmati rice and hoppy beer
finger-lickin' good.
