WINE sucks

...that is all.

I had really high hopes but--it's not that WINE doesn't actually DO anything. I figure it's pretty hard writing an emulator to get win32 apps to run under Linux. What bothers me is how shitty the UI is, like for instance how you cannot modify the launcher for a program once you've saved the configuration. If you want to make a small change, sorry, you just have to delete the old one and create a new one.

At some point I guess they'll get around to unfucking their offering but for now...bleah.

Wine's UI will suck for a while, as it's simply not much of a priority for the developers. If you're looking to run stardard desktop applications under Wine(especially MS Office), you might want to look into buying a copy of Crossover from Codeweavers. It automates a fair amount of the more fiddly bits of running Wine and has profiles for some of the larger applications.

No, I was trying to install some old DOS games (Day of the Tentacle).

Then I tried installing some newer games which use the CD drive. I told WINE which drive was the CD drive, but it refuses to save the configuration, so I always get prompted.

So far it seems as if they have had great success emulating...software for which there is a Linux alternative (e.g. Office). But they're not so great at...anything else.

Actually, if you want DOS emulation you need to use dosbox. WINE is almost purely a Win32 API emulation and doesn't do anything even vaguely related to DOS.

As to wine keeping it's settings, are you using some kind of GUI to set this up or using a .winerc in your homedirectory?
