Tal, most hollow core dores are designed with sufficient depth of wood in the perimeter framing members to allow for reasonable planing to adjust fit. Since the change in elevation of the bathroom floor will require a new jamb as well, get the thinnest new jamb you can, and if need be, plane the top surface of that as well as the bottom edge of the door. Really, it's unlikely you'll need to make a new frame member for the bottom of the door, but if you do, match the wood species and quality of the existing frame pieces as closely as possible, and use a waterproof glue to install it, then seal the edge. If you don't, differential swelling rates of the wood members will rack the door, and quite possibly cause it to jam in the frame.
