Bamboo and kelp are in the running for fastest growing too.
THe Aponogeton bulb (an fernlike aquatic plant that gets about 8" in diameter) will send up it's flower stalk up 16 to 20" in 15-18 hours. That is not steady growth so it didn't get the record.
